Chitin represents an almost inexhaustible\u00a0\u00a0source of chitosan; arthropods\u00a0constitute\u00a0the main\u00a0source. In contrast, chitosan is only found in the cell walls of certain groups of\u00a0fungi.<\/p>\n

Shrimps, crabs, lobsters and squid wastes from the marine processing industry have become the major resource used today. Proportions of chitin from these sources may vary with season and species but usually exoskeletons contain 15%\u201340% chitin, 20%\u201340% protein and 20%\u201350% calcium carbonate, with other components such as pigments, lipids, and metal salts present in small amount. Squid pen has an interesting property : it is very low\u00a0in Calcium carbonate (limestone).<\/p>\n

Chitin occurs in three forms designated as \u03b1, \u03b2, and \u03b3 chitin which differ in their degree of hydration, size of unit cell, and number of chitin chains per unit cell. The polymorphic forms of chitin differ in the packing and polarities of adjacent chains in successive sheets; in the \u03b2 -form, all chains are aligned in a parallel manner, which is not the case in \u03b1-chitin. \u03b3-chitin is a combination of both. Chitin degree of acetylation is typically 90%. \u03b1-Chitin is most abundant in shellfish exoskeletons and fungal cell walls. \u03b2-Chitin is principally found in squid pens while \u03b3-chitin appear mostly in squid and cuttlefish. The crustacean shells (crabs etc.) which are byproducts of food industry are commercially employed for production of chitin and chitosan.<\/p>\n

It is a 3 steps isolation process :<\/p>\n

  1. demineralization\u00a0accomplished by dissolution with dilute acids, usually HCl<\/li>\n
  2. deproteinization accomplished with an\u00a0alkaline\u00a0solution such as NaOH<\/li>\n
  3. decolorization to expel pigments<\/li>\n<\/ol>\n
