Epsilon-Polylysine is a homopolymer of L-lysine, an essential amino acid. Its chemical formula is (C6H12N2O)n with a molecular weight in the 3888-4300 Da range. Degree of polymerization : 25-30.


E-Polylysine is manufactured using an aerobic fermentation process using the non-toxic microorganism Streptomyces albulus. Raw materials and processing aids entering in the production of Epsilon-polylysine are all food-grade quality.

Application in food

Consumers become more health conscious and there is an increasing demand for natural preservatives. Among natural preservatives, E-polylysine  is now gaining some attention from the food industry due to its unique properties including heat stability and excellent antimicrobial activity. First introduced in Japan, it is now also recognized as safe in USA.

How it works

E-Polylysine is positively charged in water and for the most part its mechanism of action happen through interactions with the cell walls of bacterias : it kills them by disrupting their outer membrane.
