Les principales sources de chitine sont les exosquelettes de crevettes ou de crabes ainsi que la plume du calamar. Il existe 3 formes de chitine, la forme alpha par exemple, est essentiellement extraite des carapaces de crevettes et de crabes. Il faut noter que l'origine de la chitine affecte sa cristallinité, sa pureté, sa structure spatiale de même que ses propriétés chimiques.
